Beef Stifado (Traditonal Greek Stew) Grain/Gluten Free


1.5kg biodynamic grass fed stewing steak(chuck or rump)

24 baby onions

1 tin organic chopped tomatos

olive oil

1 tablespoon tomato puree

1 tablespoon cumin


3 cloves garlic

2-3 bay leaves

1 1/2 teaspoons all spice berries

6 whole organic cloves

1-2 sticks cinnamon

dried oregano

125ml organic dry red wine

4 tablespoons red wine vinegar


Place the beef in a casserole dish,add the marinade,peeling and finely slicing the garlic first, cover and refrigerate for 6 hours.

Peel the baby onions, heat the oil over medium heat and saute the onions for 5 minutes then set aside.

Brown the beef, add the cumin then return the onions to the pot, add the marinade,tomatoes and tomato puree and enough water just to cover.

Season with salt and fresh ground pepper. Bring to the boil then simmer for 1 1/2 hours, or until beef is tender and sauce is thickened.
