Ingredients:
- 1kg Diced Chicken
- 4 tablespoons Olive oil
- 1 large organic sweet potato diced
- 1 diced onion
- 3 cloves organic garlic
- 1 tablespoon of curry powder
- 1 teaspoon ground ginger
- 1 teaspoon turmeric
- 1 cup chicken stock
- 1 can coconut milk
- salt and pepper to taste
Method:
Heat half of the oil, add the organic chicken breast and season with salt and pepper. brown the chicken and set aside. Add the onion and garlic with more olive oil, curry powder, ground ginger, turmeric and sauté until the onion is translucent and fragrant. Add the warmed chicken stock to deglaze the pan. Now add the coconut milk, sweet potato and the chicken. Bring to a simmer and cover. Cook for about a further 20 minutes until the sweet potato has softened.
